Wales is a country blessed with superb producers of fantastic ingredients. Most people outside the principality will probably associate Wales with lamb and leeks! Whilst it is true that Welsh lamb and leeks are second to none, they represent just a small part of what the country has to offer. There are many small farms rearing fantastic Welsh Black and other cattle, whilst others produce superb pork, poultry, eggs, and venison. Equally there is an amazing array of vegetables and fruit available and it is possible for us to find local ingredients as diverse as leeks, potatoes, apples, squash, herbs, salt and even chillies!

Whoever we source from we always stick to the same three criteria:

  • We buy from the producer NOT a wholesaler.
  • Our meat suppliers care about their animals which are free range and enjoy the best possible quality of life.
  • Our fruit and vegetables are in season, organic where possible and picked as recently as possible. Often we will visit local farmers markets to select and buy our produce. 

This spring we will planting our own herb garden and these will be ready for use later in the year.

The Vale of Glamorgan is an area blessed with a fantastic natural larder of wild foods, with Sea Beet, Sea Kale and Wild Garlic growing within walking distance of our base. Where practical we will be adding these and other wild foods to our ingredients list in small quantities that do not damage the countryside.

Above all we will make sure that all our ingredients are full of natural flavour to ensure the tastiest food.
